Refreshing Orange Ginger Chayote Salad with BACON
Bacon and health CAN go hand-in-hand. This delicately sweet and cool salad is deliciously contrasted with a touch of rich salty bacon. No dressing needed. Perfect as is. Serves 4.
Ingredients:
5 oz washed and dried baby spinach
2 chayote squash, chopped
1 inch minced fresh ginger
2 oranges, peeled and chopped, seeds removed
2-4 slices cooked and crumbled bacon
Prepare the bacon, draining and setting aside. Crumble. Wash and drain spinach. Prepare the ginger, chayote, and orange. Distribute evenly across four plates. It's that simple. For a twist, reserve the bacon grease, adding 1/4 cup white vinegar, 1/2 teaspoon onion salt, 1/4 cup honey, 1/2 teaspoon ground ginger, and 1/2 teaspoon garlic powder. Heat and pour sparingly over portions. Dig in to the deliciously unique flavor. Sooooo, sooooo good.
