Bacon-Date CousCous with Feta and Basil

This could soooo be one of those knock-it-out-of-the-park vegetarian dishes if it weren't for the mouth-watering deliciousness of crispy hunks of bacon. This unassuming side dish will knock your socks off! Turn a filling staple food of couscous and feta into a wow-wow-wow blend of sweetness and soul. Serves 4.


2 cups cooked couscous
1 tablespoon butter, melted
4 strips of cooked bacon, broken into bite-size pieces
2 tablespoons reserved bacon drippings
1/2 cup feta
1/4 cup dates, chopped
2 tablespoons fresh chopped basil
2 oranges

Heat reserved bacon and butter. Add couscous, bacon, dates, and feta until warm. Halve one of the oranges. Squeeze the juice over the couscous and stir in basil. Remove from heat, Slice remaining orange and add as a garnish to this fabulous dish. Serve as a side to a savory meat or give yourself a double portion as a full meal. So, so good.
