Slow Roasted Carolina Rabbit at Canoe

HWYD's best rabbit in town. It's also one of our top recommended dishes overall. Chef Carvel over at canoe takes slow cooking to new levels with this ultra-refined dish. Slow roasted Carolina Rabbit with Swiss Chard, bacon ravioli, sweet potato hash and candied garlic sauce. Start with the marinated golden and red beet salad with whipped Vermont goat cheese, candied walnuts and basil oil. Then move on to the rabbit. Finish up with their seasonal sorbet. Pair the rabbit with a bordeaux. Add Canoe's backdrop of the lazy Chattahoochee drifting by, and it's a great way to celebrate that you're in Atlanta.

Notes: Canoe is a fantastic place right on the river.  Spring and Fall, dine on the patio and watch the river go by.  Great atmosphere.  Not too cramped.  Good Service.  Wonderful food prepared by the self-taught Chef Carvel Grant.  You pretty much have to valet, but the valet's are friendly and helpful.  Always make a reservation.
